Top notch breakfast, bake while you wait

 


It's no surprise at how easy it is to make something right in your toaster oven that's so delicious; as you get other chores done! I like to call this egg dish 'Frittata 101.'

When I think of Frittata I think of fluffy eggs in a ceramic or cast iron skillet. I've worked at a lot of places that serve these kind of things for breakfast, in a ceramic skillet even from the microwave but nothing beats a long bake. Since I picked up a cool looking small ceramic skillet tonight, I decided to go big and make something very hot and very tasty.

The picture on the bottom is after a 20 minute bake on 350 and the picture on the top is before baking. The dish stayed hot all throughout eating and that's what I loved most. The tomato juice in with the eggs and olive oil made a splendid consistency.

This dish is so delicious and so easy, it's almost unbelievable!

I chose no salt for this "Breakfast for Dinner" extravaganza; and it's because I had 7 chocolate chip cookies on the way home. And also can't for get to add, I've been pretty much eating a lot of Utz Small Twist Pretzels.

Let me get to the simplicity part already and it begins with the ceramic skillet, salt, pepper and olive oil. Preheat the toaster oven to desired temp. Put in a juicy sliced tomato, fresh peeled garlics, fresh basil, pre-cooked grilled chicken (cooking chicken with butter and stock is best.) Also in the skillet goes the 3 scrambled eggs, that I whisked up in the olive oil on the bottom.

I really can't believe how good it was, and I am so happy I got a toaster oven because I can literally make this in my room if I need to. Traveling at a hotel with a toaster oven and a cooler is totally key to me.

I enjoyed this breakfast for dinner Frittata with two slices of Oat Whole Wheat Sliced Bread untoasted. I was thinking about adding something else onto the main portion or even making toast with the bread but I didn't. The basil, the garlic and the extra oil I put on after cooked was good for me. I really wanted to get the raw taste and the raw consistency but think next time I make this I would try with red pepper hummus and toasting the bread; because nobody can forget how good toasted bread and eggs are.
