5 Star in a Toaster Oven: Chicken Sandwich

If you're like me, all summer long you've been eating at fast food more often because cooking with the temperatures in the 90's with the humidity is not a good vibe! It's the AC, the stove, the food, etc. The comfort adjustments never end, so I am going to do grilled chicken at the drive thru. I think fast food is somewhat healthier nowadays; that's the best way to put it.

I know making food in the toaster oven and calling it 5 star online is somewhat of a long shot but nonetheless so is calling fast food unhealthy. Personally, I think dieting is up to every individual to figure out. When I go to fast food places I make sure to customize my food so it's comfortable and basic; and also avoid the fries and soda.

In terms of this delectable chicken sandwich above, that is what I am here to brag about!

The chicken I used for the sandwiches was from the 4 chicken breasts I made a few days ago. They have stored nice in the fridge and so far I have used all of it for two meals; the baked eggs and this chicken sandwich.

Although the chicken is pre-cooked, don't be so certain that this is going to be an in and out kind of deal. And especially because there is absolutely no cheese on this sandwich; just roasted red pepper hummus. Surprisingly, the red pepper hummus comes off as a little bit cheesy in flavor, mixed with the entire sandwich and garnish.

It's clearly simple to make, but it tastes so great.

Spread some hummus across the thick whole wheat bread, put the hot chicken pushed down into the hummus and lightly spread more hummus on another slice.

Put in the toaster oven for desired toast. When finished, put fresh ripe and cold tomato slices on the sandwich.

What really brings this sandwich to the light in my medium level opinion is the whole wheat and the chicken. Just imagine when you go to Chic-Fil-A. Last time I checked, there is no whole grain chicken sandwich on the lunch menu; but you can grab a whole grain breakfast sandwich with chicken and cheese. This is kind of where the flavor is coming from and it's reminding me of how good whole wheat toast and chicken is.

If you go to this post here, there is more information about how I cooked the chicken:

When I finished adding the tomatoes that's basically it; besides the dish garnish.

Open up the sandwich and put ground black pepper over the tomatoes and drizzle olive oil over the dish and the open sandwich. I chose to slice my sandwich in half and I can say it was well worth it. Tomatoes are one thing that always have to be on chicken sandwiches. Considering this tomato was so juicy, blending in with the pepper and the olive oil it almost tasted like pasta sauce in itself. The overall taste of the hummus was regular, with the roasted red pepper, but also came so close to a cheese flavor. This is something unique to me, so I want to try and explore why the hummus was so powerful in this way.

Ever since I got my toaster oven, I have used it for a lot of great tasting food options that are healthy. This is something that I love to say proud, got to watch the quick and easy meals. If you can prep something and keep it cold, try and use the toaster ovens for that. That's what most of my friends say too. It's just easy for everyone in the house for most nights, not making noise in the kitchen or having to clean up a mess. The best time to prep is when you have the house to yourself!
